Salted Bean Daifuku Mochiwith YUCa’s Tea Roasted Green Tea

Daifuku mochi is a traditional Japanese confection consisting of a soft, chewy outer layer made from glutinous rice or rice flour, filled with sweet bean paste. There are many variations of the filling, and among fruit-based daifuku, strawberry daifuku is especially popular. The flavor of the mochi itself also varies, offering a wide range of types such as shio daifuku (with a hint of salt), yomogi daifuku (made with mugwort), mame daifuku (with salted beans), and matcha daifuku. Thanks to its friendly appeal and wide variety, daifuku mochi is a beloved sweet enjoyed by people of all ages.

In this feature, we’re introducing a pairing of Mame Daifuku (Salted Bean Daifuku Mochi) and YUCa’s Tea Roasted Green Tea (Hojicha).Mame daifuku is a type of daifuku where smooth red bean paste is wrapped in stretchy, soft mochi dough that’s mixed with salted beans such as red peas or black soybeans. The chewy texture is accented by a subtle saltiness, while the bean paste filling is gently sweet, allowing the natural flavors of the ingredients to shine. This simple yet deeply satisfying flavor pairs beautifully with hojicha. Known for its roasted aroma and clean, refreshing finish, hojicha has very little bitterness or astringency and a light, smooth mouthfeel. The warm, earthy fragrance of roasted tea leaves harmonizes perfectly with the flavor of the beans and the subtle sweetness of the filling, leaving a gentle and lasting aftertaste with each bite.
