
Fish-shaped Cake with YUCa’s Tea Green Tea
Taiyaki(Fish-shaped cake) is a traditional Japanese sweet that originated in 1909, when the round imagawayaki (a type of filled pancake) was reimagined in the shape of a sea bream (tai), a symbol of good fortune. For over a century, it has been cherished across generations as a nostalgic and comforting treat. While sweet red bean paste (azuki anko) is the classic filling, this time we’re introducing a special variation: taiyaki filled with Naruto Kintoki sweet potato. Grown mainly in Tokushima Prefecture, these potatoes are cultivated in sandy fields along the Seto Inland Sea. The well-drained soil and mild climate help produce potatoes with a naturally rich and sweet flavor. Taiyaki made with Naruto Kintoki offers a gentle, earthy sweetness and a delicate aroma. When combined with the crispy, golden-brown crust, it creates a perfectly balanced harmony of flavor and texture.
This special Naruto Kintoki Taiyaki is paired with YUCa’s Tea Green Tea (Fukamushi Sencha). To enhance the sweet potato’s flavor, it’s best to draw out the full umami of the green tea. Brewing at a slightly lower temperature reduces bitterness and highlights the tea’s mellow, rounded taste. For best results, steep the tea gently at around 60 to 70°C (140 to 158°F). With just a small adjustment in brewing temperature, you can elevate your Japanese dessert experience into something truly refined and soothing.
