
Chewy Mildly Sweet Rice Flour Confection with YUCa’s Tea Handpicked Organic Matcha
In our tea pairings article series, we’ve introduced various types of Japanese sweets (wagashi), but did you know that there are different grades of wagashi as well? Jonamagashi (上生菓子) ranks as the highest grade of wagashi, emphasizing seasonal elements and artistic qualities. Today, I’d like to introduce Suama (chewy mildly sweet rice-flour confection), a type of jonamagashi.
Suama is characterized by its chewy texture and mildly sweet flavor. Its delicate pink color, reminiscent of budding flowers, gives a spring-like impression. To pair with this, I recommend YUCa’s Tea Handpicked Organic Matcha, carefully harvested during the spring’s new tea season. The refined fragrance and rich flavor of the matcha complement the elegant and vibrant appearance of the suama, as well as its subdued sweetness.
