
Sweet Potato Chips with YUCa’s Tea Green Tea
The green tea produced in Minami-Kyushu City, Kagoshima Prefecture, is called “Chiran Tea,” and YUCa’s Tea Green Tea (Fukamushi Sencha) is also produced in Kagoshima. Additionally, Kagoshima is the largest producer of sweet potatoes in Japan, making it famous as a production area. Today, we will introduce a tea pairing based on these local specialties.
Typical sweets made from sweet potatoes include Imo-Yokan, Daigimo, Imo-Kenpi, Kuri-Kinton, and Sweet Potato Pie. However, we will introduce sweet potato chips made using French culinary techniques and knowledge. These chips were purchased from Mitsuimo Laboratory located in Yanaka, Tokyo. They highlight the natural sweetness of the sweet potato while offering a crispy, light texture that makes them easy to eat. After enjoying the crunchiness of the sweet potato chips, drinking the Fukamushi Sencha enhances the umami and freshness of the tea, creating a perfect pairing that will make you want to alternate between the chips and the tea.
Mitsuimo Laboratory is about a 30-minute train ride from the culinary studio, YUCa’s Japanese Cooking, making it a great place to visit after a cooking class.
